A classic Mediterranean herb with very aromatic leaves, it is often grown in the herb garden. It can be grown as a low hedge or planted along a slope to help control erosion. Hyssop works well in containers, mass planted along an edge, or used in small groups in a country garden. The violet-blue to pink flowers are held on long spikes and are extremely attractive to bees and other pollinators.
The foliage can be used in cooking, for example to flavour oily fish. It is commercially distilled for its aromatic oil and used as a flavouring. It has been used in traditional herbal medicine for its reputed antiseptic properties and to relieve coughs.
Prefers well-drained, fertile loam soil but will grow well in a variety of soils including dry sandy conditions. Pruning in spring is best and will help the overall health of the plant, as unpruned plants will degenerate over time. Well established plants are drought tolerant and cold hardy.
